Mushrooms With Baby Bok Choy - Ruiji Szechuan Restaurant

This is one of my favorite veggie dishes.  I can eat this everyday if only there aren't other meaty dishes from all kinds of restaurants that tempt me to eat meat. This is how veggie stirfry is done right, in my opinion.  It's not some dead, limp and yellowish veggies drowning in heavy brown sauce like so many veggie stirfry dishes in other Americanized Chinese restaurants. The bok choy in here tasted crisp, delicately sweet with really great bok choy taste. I could really taste the bak choy and smell it too. The braised shiitake mushrooms were so flavorful. I hope that this Chinese restaurant can keep maintaining this kind of quality.  I had been to Chinese restaurants where they served bitter bok choy and even bitter shiitake mushrooms.  It's not easy to find decent Chinese restaurants in this suburb, so I hope the chef at  this restaurant can stay put.
